Low Carb Peanut Butter Criss-Cross Cookies

Growing up one of my favorite cookies were Peanut Butter Criss-Cross cookies that my mom would make us.

I’d help make the cookies and when it came time to make the criss-crosses — count me in!  The criss-crosses made by dipping the fork in sugar each time so the dough wouldn’t stick to the fork was the best as a kid!  You got to play with your food and the anticipation of those cookies coming out of the oven… oh boy!  I get the same feeling now as an adult, only a different recipe.

Blueberry cheesecake is what we had on our minds when we went to pick blueberries this spring…. ok, fine there might have been a few other foods and desserts we were thinking about too… blueberry pancake mistakes… frozen blueberries… blueberry popsicles…

When I first started eating a low carb keto diet, I thought I was going to have to give up some of my favorites foods ~ like pancakes with syrup on them ~ just to name one.  Turns out that wasn’t the case at all!  Yay!

This low carb maple pancake syrup topping was inspired by one of my ice cream recipes and it’s totally perfect for putting on top of low carb pancakes!  It is not a typical gooey syrup. It is more of a cream type topping that is a wonderful replacement for the traditional sugar filled syrups.

Keto long term is very possible – You CAN do it if it’s something you decide is good for you!  Once I experienced the feeling of eating a low carb diet, I decided this was definitely for me. And I don’t have any plans to give it up!

I’ve shared quite a few recipes on my blog so far, but this blog post will be more informational and hopefully motivational for you to decide to take some sort of steps to improve your health.

Over the past year, I’ve made some not so great low carb pancakes from recipes around the Internet, but I still couldn’t find a homemade pancake that was easy to make, had a relatively good texture, and tasted quite like I wanted it to. So, naturally when you can’t find what you’re looking for – you come up with your own!

A little of this and a little of that, mix them up, put them in a hot pan with some butter, and the family loved them. Wait, what?!

How To Get All Your Macros In Daily

When I started eating a Ketogenic diet, my goal was to eat 20 grams or less of carbs daily, but it was not easy to learn macros.  I used an app on my phone to log everything I ate to be able to tell if I was keeping my day balanced between the 3 macros.  Fat/Protein/Carbs

The app I use is MyFitness Pal app, and one of the features in the free app is to set up goal percentages. So, I set up a 70/25/5 distribution.  This means 75% fat / 25% protein / 5% carbs.  Once I set this up, I could easily see how my macros were adding up throughout the day as I tracked the food I ate.  This method was super easy for me to follow because I could see what I needed to eat more of – or what I needed to slow down on to meet my goals.
