Nope it’s not Mash Potatoes – It’s Low Carb Cauliflower Mash!

This has become a Low Carb recipe favorite in the house right now as a substitution for mashed potatoes.

We love it and the kids love it!  I had to try a few different recipes and then ended up coming up with my own combination of ingredients that the whole family enjoyed. So, of course we had to give it a new name – Cali-Mash!





 

Ingredients:

  • 16 oz bag of frozen Cauliflower Steamed
  • 1/2 cup shredded cheese (I use cheddar)
  • 2 tbsp cream cheese
  • 1/8 tsp garlic powder
  • 2 tbsp butter (I use Kerrygold)
  • salt to taste
  • 3 cooked bacon slices

Instructions:

First steam the cauliflower until it’s pretty soft.  If you don’t, it will be hard to get a smoother consistency for your Cali-Mash. My steamer does it in about 10-15 minutes.

While the cauliflower is steaming add the cheeses, garlic powder, and butter to a small bowl. No need to mix it. (You are just getting it ready to dump into the blender so it can mix with the hot cauliflower.)

Cut the bacon slices into small pieces or crumble them.

After the cauliflower is done steaming, transfer it to your Ninja, or blender and add the ingredients that you prepped ahead in the bowl.

Blend until you are satisfied with the consistency, and it is ready to serve.  Add the bacon crumbles to the top and enjoy.

An additional serving suggestion (pictured) is to pour the Cali-Mash in an oven safe dish, sprinkle some cheddar cheese and bacon crumbles on top and put it into the oven until cheese is melted.  You can keep it in the warm oven as you finish getting the rest of your meal ready.

 

 

Note: You can easily double this recipe in order to have left overs as a side for another meal during the week. Such as a Low Carb Beef Brisket that’s been in the crock pot all day.
