I may only be 7% Irish according to my DNA, but still sounds like a good reason to celebrate St. Patrick’s Day with a good Low Carb Keto Beef Brisket!

Low Carb Keto Beef Brisket in the crock pot will make such a tender meat entree.

It’s also an excellent starter to many other meals throughout the year, besides St. Patrick’s Day!

Ingredients:

  • 3-4 pound Beef Brisket
  • Salt and Pepper
  • Butter
  • 1 tbsp of dried minced Onion (or 1/3 cup diced fresh onion)
  • Water or Chicken Stock





 

 

Instructions:

First step is to butter the inside of the crock pot you will be using.

Next, you will want to season the meat with salt and pepper on all sides.  Determine if you will need to cut the brisket to fit in your crock pot and go ahead and do so if you need to. If you do have to cut your brisket in order to make it fit in your crock pot, you will want to rotate the pieces during the cooking process so all the meat has some time in the simmering liquid.  This will make your meat much more juicy.

(I use about a 3 pound brisket usually and it don’t have to cut it.  This is the crock pot I use.)

After you have seasoned the brisket and made any cuts so it fits, it’s time to put it in the buttered crock pot with the fat side UP.  As the brisket cooks the fat will melt and somewhat dissolve into the meat making it be moist and have more flavor.

Next, you add either water or chicken stock in the crock pot until it’s covering about half way up side of the MEAT (not the crock pot – or you will have soup)

Cover the crock pot and set your timer.

Cooking time: 6-8 hours on Low for tender meat

 

So, you want to have cabbage too?

♦ When meal time is about 15-20 minutes away, you can add a head of cabbage that’s been cut into 8 wedges into the crock pot.

Voila – Beef Brisket and Cabbage (Meat and Veggie)
