Yep!  Low Carb Chicken Cordon Bleu Stew, and it’s uh-mazing!
Stew ?!       Hahaha yes!  “STEW” !
It’s not a casserole, and it’s not a soup… soooo I’m going with Stew!

The name of the game in our house is simple easy to make dinners on weeknights.  We have limited time each night between commuting from work, the kids, homework, sports and family time.

I see so many recipes online that are, quite frankly way too many steps for me.  Easy, simple and still flavorful food is what I aim for, and this ‘Stew’ will not disappoint!

Ingredients:

  • 1 small head of cauliflower, chopped into smaller pieces & then steamed
  • 2 cooked chicken breasts, chopped into bite sized pieces
  • 2 cloves garlic
  • 3 tsp yellow mustard
  • 1 ½ cup heavy whipped cream
  • 5 oz ham, cooked and diced
  • 3 oz Gruyere cheese, shredded
  • ¼ cup Parmesan cheese shredded on top
  • Cracked black pepper




Instructions:
  1. Steam the cauliflower. It can be cooking while you are working through the other steps of the recipe.
  2. Chop up your raw chicken breasts into bite sized pieces and add them to a non stick pan with the garlic.  This is my favorite non-stick pan.
  3. Cook the chicken until it reaches an internal temperature 165 degrees. Then, add the mustard, heavy whipping cream and ham to the pan and stir.

  4. Once that mixture comes back to temp and is warm, slowly add the Gruyere cheese and stir until melted.

  5. Add the steamed cauliflower and gently combine to make sure the cauliflower gets well coated with the sauce.

  6. Pour mixture into a glass baking dish (I used a round pie dish) and sprinkle the Parmesan cheese on the top. Crack some black pepper on top to taste.
  7. Bake at 375 degrees for 15-20 minutes, or until bubbly.





 

Note:  This is an easy meal to make on a prep day and reheat on one of your busy weeknights where it’s difficult to get dinner on the table at a reasonable time.
