Yep! This is my version of a low carb keto friendly breakfast sandwich (similar to the McGriddle) brought to you by Leftover Pancakes!

I posted my version of a keto friendly McGriddle on my Instagram back in October 2017 and I’ve made them pretty regularly since then. They are definitely a winner for breakfast when you want something different and have leftover pancakes, or you can have on-purpose leftover pancakes. *wink*





A little savory and a little sweet. This breakfast sandwich packs both flavors into one!

They are also an excellent breakfast to make ahead for the week. Just wrap them in parchment paper and it’s a quick reheat in the microwave on a work day when you might have limited time.

 

First you will want to make pancakes. The recipe below makes 10 pancakes, so you will have enough for 5 sandwiches.

When making the pancakes, make sure you are making relatively small pancakes for 2 reasons. First, you don’t want them huge because you will not be able to finish the sandwich. They are very filling! Secondly, you won’t be able to turn the pancakes in the pan without them breaking. This takes a gentle flip.

 

 

Keto Friendly Breakfast Sandwich

This keto friendly breakfast sandwich is similar to a McGriddle. It makes savory and sweet taste great with egg, cheese and meat all in one easy sandwich.

Ingredients

  • 3 oz Cream Cheese softened
  • 4 Eggs
  • 2 tsp Vanilla
  • 1 tbsp Erythritol granular
  • 2 ½ tsp Baking powder
  • ½ tsp Maple extract
  • 6 tbsp Coconut flour
  • Heavy whipping cream until desired consistency 1-2 tbsp approx.

Instructions

  1. Preheat a skillet or griddle to med/low heat.

  2. Mix the wet ingredients well then add the coconut flour and baking powder last.

  3. After skillet or griddle has come to temp, add butter and coat cooking surface.

  4. Place small spoonfuls of pancake batter on griddle slightly smaller than the size of your breakfast sandwiches (batter will expand slightly when cooked).

  5. When the underside of the pancake is cooked to a golden brown, gently flip the pancake to cook second side.

  6. When they are cooked to a golden brown, remove from griddle. Repeat until uncooked batter is all used.

  7. Now all you need are your eggs, meat and cheese to assemble your sandwiches.

TIP – Keep in mind that if you are low on your fat macro you can always spread butter on your pancakes when you assemble them in order to up your fat for the meal.
