When I first started eating a low carb keto diet, I thought I was going to have to give up some of my favorites foods ~ like pancakes with syrup on them ~ just to name one.  Turns out that wasn’t the case at all!  Yay!

This low carb maple pancake syrup topping was inspired by one of my ice cream recipes and it’s totally perfect for putting on top of low carb pancakes!  It is not a typical gooey syrup. It is more of a cream type topping that is a wonderful replacement for the traditional sugar filled syrups.

This is a definite kid winner too!  I have one kid who likes syrup and one that prefers eating pancakes plain… and has been like that forever.  To each their own! For the one who likes syrup I have no problem anymore with passing this syrup. I know it isn’t filled with sugar and it won’t spike blood sugar levels.





 

This is a simple 5 ingredient recipe and it uses the Keto friendly sweetener that I affectionately call “Pink Sukrin,” but it’s actually called Sukrin Melis (Icing Sugar) Here is the link.

The Pink Sukrin is a blend of the natural sweetener erythritol (polyol) and steviol glycosides.  This sweetener doesn’t have that sometimes odd aftertaste that some of the other ones leave behind.

Ingredients:

¼ cup butter
⅓ cup confectioners sweetener (I use this)
½ tsp vanilla
½ cup heavy whipping cream
½ tsp maple extract

Instructions:

Melt butter until liquid, add the confectioners sweetener, vanilla, maple extract and mix well.

Add heavy whipping cream and mix well.  I use a milk frother like this one to mix it until it becomes a light creamy texture.

 

Depending on the temperature of the heavy whipping cream, the syrup may thicken up (that is the butter getting cold again).  Just pop it in the microwave very briefly to soften if needed, and it’s ready to serve on your favorite low carb pancakes.

Note: You can save leftover syrup in the refrigerator.  It will solidify somewhat because of the butter content, but it easily reheats in the microwave to make it a more liquid creamy syrup consistency again.
