Green Is The New Black – When it comes to delicious Low Carb & Keto Foods

Green carbs are one of the most over looked parts of eating a healthy keto diet.  There are many important vitamins and minerals that our bodies can benefit from without having to eat starchy vegetables like corn, squash, peas and sweet potatoes. Just one serving of these starchy vegetables can put you over your carb limit for the entire day, and spike your blood sugar.

Reminder of your GOAL: Maintain even blood sugar levels that won’t cause the insulin hormone to over produce. Starchy vegetables are out!

You can get all the important benefits of the vitamins and minerals your body needs from low carb green veggies and still feel good about what you ate afterwards.

When I consider my total carb count for the day, I will only count the carbs that come from these green vegetables below IF I go over one serving of them.




 

When I eat my Brussels Sprouts recipe (I will be adding it to the blog soon!), I do count those carbs because I usually have more than one serving because they are so good AND unfortunately, Brussels sprouts are one of the highest green carb veggies.  Better safe than sorry when you’re accounting for your macros, especially with carbohydrates and protein.

 

 

Top 3 Nutritious Green Carbs

(grams of carbohydrates in 1 serving – approx 3 oz)

#1 Spinach – 1 g of carb

You get a ton of spinach for 1 serving! That’s why I rate this as #1.  You can also add some cream, butter and garlic and Parmesan cheese in a pan and saute it.  You end of with a great creamed Keto Spinach side dish.

 

#2 Avocado– 2 g of carbs

This is a good side to a meal when you need to up the fat content, and it is a powerhouse for nutrition at the same time.  This is also an excellent keto snack. Click here to check out my keto snack list.

 

#3 Lettuce – 2 g of carbs

The trace minerals and nutrients salads and greens are so important to your body and a good way to bulk up your meals in a low carb way.  A serving size of lettuce is huge by the way!
