“… it makes me laugh now when I think about all those years I didn’t meal plan.”

If you would have told me 5 or 10 years ago that I would be the die hard meal planner that I am today, I would have laughed and thought to myself there is NO WAY!.. like, NO.WAY!

  • What a waste of time
  • I can’t plan THAT far ahead
  • How will I know what I want to eat ahead of time?
  • Woah – that would be a ton of food to buy
  • How does food stay good that long anyway?
  • I can’t sit down long enough to plan a week of food
  • I’m too busy




Even just a few years ago, one of my best friends asked me, “Don’t you get tired of going to Publix every day?”

I kid you not… I was at the grocery store every day, and some days multiple times a day.  Either during my lunch break, or on the way home from work I stopped for groceries so we had dinner that night, or so I had lunch that day.

I’m fairly certain the clerks that used to see me everyday probably wonder where I’ve been.

I had all the excuses in the world why not to meal plan, and although I considered myself a fairly organized person I considered meal planning a little over the top and pretty much something ‘other’ people did… You know those ‘other’ people… the organized ones, the list makers, the planners. Little did I know…

I ended up venturing into meal planning a little bit (for maybe 3 days worth) once we had kids, because taking 2 small kids into a grocery store after a long day at work… not a walk in the park if you know what I mean.

I soon realized that 3 days of planned meals was pretty nice!

Hmm, I wonder if I could do a week?!

So, I planned a whole week, which worked GREAT for a while, but then I got lazy about it and I stopped sticking to the plan.  Oops.  I used most of the food I bought for the week, but it wasn’t always for what I planned, and unfortunately I did throw out some things that went bad.  But that was because we would decide eating out was much easier some days… Even with the kids LOL  And then at some point I stopped planning meals all together.




But, then this whole Low Carb thing started happening and I realized that either I or #KetoHusband was stopping by Publix almost every day AGAIN!  And I’m like ‘what the hick??’ (as my daughter says) Cracks me up every time 🙂

Back to meal planning we went. The only way for me and my husband to be successful at giving this low carb lifestyle a ‘good try’ was to plan what we were going to eat and stick to the plan. This was a totally different way of eating that we have done before and it took planning – that was for sure!

Meal planning when on a low carb keto diet will help make meal time easier and less stressful.

So I guess over the last few years, and especially this last year…

…I’ve become one of those ‘Other‘ people.

(Which is totally awesome – BTW!!!)
