No beans here!
Substitute a low carb healthy fresh veggie instead – Zucchini!
It’s a definite family favorite. Even my pickiest eater in the house loves chili night!!!
Zucchini is a very low starch vegetable and its impact on blood sugar is extremely low, which makes it a staple in our low carb kitchen. It is also an excellent source of vitamin B-6 and high in fiber and potassium.
This chili is 5.3 carbs for about 1 1/2 cup serving and a kid favorite in our home.
Ingredients & Recipe
Chili Recipe
- 1 1/2 lbs turkey meat
- 1/4 cup onion (chopped)
- 1/4 cup green pepper (chopped)
- 1 batch chili spice mixture (ingredients below)
- 2 cups Rao’s Marinara
- 2 medium zucchini
Chili Spice Mixture
- 1/4 cup chili powder
- 1 tsp cumin
- 1 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1/8 tsp cayenne pepper
Instructions
- In large pot, cook turkey meat on medium heat until done.
- Add onion and peppers and cook until softened.
- Add Chili Spice Mixture and stir well to coat the meat, onions and peppers.
- Add the Rao’s Marinara and stir well, and bring chili back up to temp.
- Dice the zucchini into bite size pieces, add to pot of chili and stir.
- Simmer chili for approx 15-20 minutes or until the zucchini is the desired tenderness you prefer. Stirring occasionally.
- Serve with sour cream and cheddar cheese. *We add hot sauce too!
Recipe Notes
5.3 carbs for about 1 1/2 cup serving. Plus anything you add to the top… ie. Cheese, sour cream.
